Fauxgurt, Oat, and Tropical Fruit Parfait

By Ashley | Breakfast , Snack

I want my first recipe post this spring to be fun, fruity, and colorful so I grabbed some gorgeous fresh fruit and put the Vitamix to work! Yogurt. It’s a breakfast staple for many of us. In fact, I started most days with a bowl of Greek yogurt for several years. It’s protein-packed, probiotic filled, sweet, and pairs well with fruit, granola, etc., so I understand the allure. But let’s talk dairy for a second. […]

Flax Crispy Treats

By Ashley | Breakfast , Recipes , Snack

Rice crispy treats are a quick, no-fuss solution when hungry children demand a sweet snack. Despite being only “three” ingredients, each ingredient is actually a plethora of processed food and chemicals that offers very little nutritional value. But . . .  what if we make a few swaps and replace processed cereal, butter, and marshmallow fluff with whole foods. And don’t worry, you don’t have to sacrifice that crispy, sticky, sweet, buttery taste you love. […]

Apple Cinnamon Muffins

By Ashley | Breakfast

Paleo Donut Holes

By Ashley | Breakfast

Happy National Donut Day! And my gratitude to the brilliant mastermind who created the holiday (and of course the creator of the donut!) As much as I crave and love real, pure, plant-based food, I’m human. So yes, I day dream about donuts from time to time. And for the sake of perfecting this recipe, I had my share of them this week. No complaints here. Who said that healthy girls can’t have donuts too?! […]

Lemon Cream Chia Pudding

By Ashley | Breakfast

This chia pudding is so amazing, I feel like I’m eating dessert for breakfast. Thanks to coconut, cashews and some great quality honey, this healthy, satiating (and Raw!) breakfast tastes like a guilty pleasure =) And what’s even more awesome, it’s so great by itself it requires few (if any) toppings so you don’t have to fiddle to find healthy, tasty toppings to enhance the flavor or disguise an aftertaste (like I know we’ve all […]

Almond and Rice Flour Pancakes with Sauteed Pears and Almond-Date Streusel

By Ashley | Breakfast

All I have to say about this recipe is that it’s like dessert for breakfast, but without the guilt. Feel free to substitute whatever seasonal fruit you have on hand. Wild blueberries would be great in the middle of summer! And a piece of advice: make extra streusel or you will regret it. Serve it over pretty much anything =) This recipe serves two generously. Almond and Rice Flour Pancakes with Sautéed Pears and Almond-Date […]
