Rice crispy treats are a quick, no-fuss solution when hungry children demand a sweet snack. Despite being only “three” ingredients, each ingredient is actually a plethora of processed food and chemicals that offers very little nutritional value.
But . . . what if we make a few swaps and replace processed cereal, butter, and marshmallow fluff with whole foods. And don’t worry, you don’t have to sacrifice that crispy, sticky, sweet, buttery taste you love.
This sophisticated version has more flavor and satisfaction in every bite, and is healthy enough for breakfast. All you need is a few ingredients and 10 minutes!
Kid-friendly Cereal Bars aka Flax Crispy Treats
2 c Enjoy Life Crunchy Flax Cereal
¾ c whole rolled oats
3 tbsp raisins
½ tsp cinnamon
Pinch sea salt
Optional: ¼ c cashew pieces
5 tbsp almond butter
3 tbsp coconut oil
¼ c raw honey
Stir the dry ingredients together in a bowl. Add almond butter, coconut oil, and honey to a medium saucepan and cook on low until smooth. Stir in the dry ingredients. Transfer to a parchment lined pan. Cover and refrigerate. Makes 16 smallish treats.
