Super Nutritious Eggs & Toast
Forget everything you’ve learned that eggs and bread are “bad” for you for a moment.
Also, forget about the idea of following a formal recipe, because recipes are over-rated. (Unless it’s a baked good, then measurements are necessary 😉
Now let me introduce you to my favorite embarrassingly easy, yet completely satisfying comfort food meal.
It’s perfect for those moments when you can’t decide what you want to eat, or when you haven’t been to the grocery store in far too long.
Fancy, Healthy Eggs + Toast
It’s not your average egg + Wonder Bread combo. It’s actually full of good-for-ya stuff thanks to
Method:
Heat the oil in a non-stick pan and warm up the leftover veggies (If they are raw saute them for a few minutes, otherwise you are just heating them up)
In a bowl, whisk an egg (or 2 or 3) with a splash of non-dairy milk or veggie broth, salt, and pepper
Add a bit more oil and the eggs to the pan. Cook over medium heat for 20-30 seconds, then continue to cook on low (flipping once the bottom is set)
Once the eggs are barely set, slide them on to a plate and add the greens to the pan to wilt them slightly – season as desired.
Toast the bread, and smear with desired spread, top with greens, then eggs.
Optional: add more greens/cheese/sauerkraut on top
