This delicious crumble is raw and vegan and takes 2 minutes to make. It is a great addition to anything really: yogurt, ice cream, fruit, oatmeal, and the list goes on . . .
Pecan and Date Crumble
1 c raw pecans or pecan pieces
¼ c rolled oats (optional)
4 large fresh dates, pitted and quartered
Pinch of salt
½ tsp cinnamon
In a food processor, pulse nuts (and oats if using), salt, and cinnamon until they are broken into very small pieces. Add dates and process for 20 seconds or until crumbly. Store refrigerated for up to 1 week.
