Happy August, foodie tribe!
I haven’t shared a 10 minute recipe in a while!
And to be honest, 10 minute recipes are much of what I eat, because even I don’t want to be a kitchen slave most days.
In a perfect world, I would have unlimited time to cook my heart out with zero responsibilities, but there’s this thing called REALITY, dammit.
Anywho, in addition to being freaky fast (take that, Jimmy John’s!), this toast satisfies my desire for a tasty snack or meal with all the right textures a flavors. Sweet, salty, creamy, crunchy, herbaceous. You get the gist 😉
I also love that this recipe is the epitome of eating seasonally. Late-summer juicy blackberries, vibrant fresh basil, and avocados are in abundance in August. Yay!
Anddd, It’s satiating, but not heavy.
Bonus: it’s fun to prepare, and even more fun to eat!
No excuses not to make this one. Unless you hate avocados (do those people exist?!) In which case, my condolences. But also, Kite Hill makes a damn good vegan ricotta that would be dreamy here too.
Basically, I just want you to make some really damn good toast, mm’kay?
Blackberry Basil Avocado Toast (Serves 2 as a light meal)
Ingredients
2 large, thick-cut slices sprouted whole grain bread (or fresh whole grain or sourdough)
1 medium-large ripe avocado
Juice 1/2 lime
1/4-1/2 tsp Himalayan sea salt
Handful blackberries, halved
1-2 tsp hemp seed hearts
8-10 small basil leaves
Raw honey, for drizzling
Method
Add the avocado flesh to a bowl with the lime and salt. Gently mash.
Toast the bread to your liking. I like mine pretty toasty so that it holds up to the heavy toppings.
Spread the avocado on the bread slices and top with berries, basil, honey, and hemp seeds.
Dig in!
