Healthy Valentine’s Day Tiramisu

I just created an easy, healthy, crazy delicious tiramisu! With heart stencils and beet juice for a festive Valentine’s Day twist! 


The ultimate indulgent February breakfast or nourishing dessert. 

Baking and indulging in a slice or two is the perfect act of self-love on February 14 and beyond šŸ’žšŸ„°

Cake: simple mills vanilla cake mix (baked very thin in a sheet pan)

Follow directions on the mix, subbing half the oil for applesauce or unsweetened non-dairy yogurt

For vegan version: use 2 egg replacers instead of 3 regular eggs. I’ve used Bob’s Red Mill and flax eggs.

Bake on parchment (spread about 1/2 inch thin) for 15-17 minutes.

Cool completely.

Coffee Soak: 1/4-1/3 c Califia Farms almond milk protein latteĀ 

Pour over cooled Cake.

Cream (made in Vitamix):

3/4 c coconut cream (or extra thick coconut milk)

3/4 c white Japanese sweet potato puree

2 tbsp maple syrup, coconut nectar or stevia to taste

2 tsp vanilla extract

3-4 tbsp coconut milk or coconut water for blendingĀ 

Beet juice for color

Blend all the ingredients to form a smooth thick cream.

To Assemble:

Cut cake in half.

Use a plate or shallow dish for assembly.

Spread 1/3 cream on the bottom layer of cake. dust with cacao.

Stack second half of cake on top.

Spread most of remaining cream on top. You’ll probably have some extra.

Top with Dutch cocoa
