Healthy Air-Fried Pumpkin Donut Holes

Fall is in the air, which means pumpkin is on my plate! Loving my first Autumn recipe of the year: healthy air fried pumpkin donut holes


I provided a gluten free version and a Paleo version. Both are dairy free =)

Healthy Air-fried Pumpkin Donut Holes (GF)🍩🧡

You need: 

2 tbsp Pumpkin puree 

1 tbsp Maple

3/4 tsp molasses 

1 1/2 tbsp coconut sugar

1 small scoop Amy Myers MD salted caramel Collagen protein 

1/4 c GF flour

1/4 c Almond flour

1 tbsp Coconut flour 

3/4 tsp Baking powder

1/2 tsp cinnamon and/or Pumpkin spice 

2-3 tbsp Califia Farms creamer of choice

PALEO VERSION:

3 tbsp Pumpkin puree 

1 tbsp Maple

3/4 tsp molasses 

1 1/2 tbsp coconut sugar

2 tbsp Amy Myers MD pumpkin spice Collagen protein (or additional 2 tbsp almond flour) (CODE: FOODLIFE10 for a discount) 

1/4 c Earthchimp vanilla protein powder  (CODE: THENAKEDFOODLIFE to save $$)

1/3 c Almond flour

1 tbsp Coconut flour 

3/4 tsp Baking powder

Pumpkin spice and/or cinnamon 

2-3 tbsp Califia creamer 

Mix all the ingredients with a hand mixer (or use a food processor)

Portion into 10-12 donut holes.

Air fry for 12-15 minutes at 350 degrees. For regular oven, bake at 400 for the first 4-5 minutes then lower temp to 350

Glaze: 3 tbsp coconut butter + 2 tbsp coconut milk + cinnamon, 1-2 tsp sweetener of choice  

Melt glaze ingredients over low heat then transfer to a bowl.

Coat slightly warm donut holes in the glaze then refrigerate immediately. I recommend using parchment so that the glaze doesn’t stick. 

Enjoy chilled or at room temperature.
