✨ELDERBERRY ICE CREAM WITH BLACKBERRY SWIRL ✨
New to the flavor of elderberry? I define it as If blueberry and lavender had a baby! Both floral, and fruity, I love it’s depth of flavor, especially in a creamy frozen dessert like coconut milk ice cream 😉

It’s officially time to dig out your ice cream machine because I gotcha with this simple and nourishing recipe that stands on it’s own, tastes beautiful nestled in a cone, or is truly epic on your favorite berry dessert!
Elderberry Ice Cream with Blackberry Swirl
1 – 14 oz can full-fat coconut milk
2 c vanilla almond milk
1/3 c raw honey or maple syrup
Juice from one large orange (option to use a little zest for floral flavor)
2 tbsp tapioca
10-12 drops stevia
Homemade or jarred blackberry or blueberry jam/preserves for the swirl
Blend all the ingredients other then the jam for 30 seconds, or until smooth and frothy ice cream base forms.
Chill the mixture for 8 hours or overnight.
Churn in an ice cream machine, following the instructions on the machine.
Mixture will be quite thick and adhere to the mixing paddle when it’s ready.
Quickly transfer to small glass jars or a shallow glass container, layering swirls of jam throughout.
Thaw in the fridge for 1-2 hours, depending on freezer temperature, before enjoying!
