The past couple years I’ve consistently posted healthy cake recipes here because celebratory desserts should be created on a regular basis, yes?
Also, I’m filled with child-like excitement when I see sprinkles ever since creating a Funfetti flavor of my Coco Amor Superfood Ice Cream! ???
And although it’s not practical to bake a cake or make homemade ice cream everyday, it IS TOTALLY DOABLE to snack on NO-BAKE FUNFETTI CAKE BITES any time – or all the time ?!!!
I made them for my birthday (Hey 29), shared them with yoga students and friends, and now it’s time to share them with everyone! So next time you need a nostalgic homemade treat whip up a batch of these simple, easy, and sprinkle-filled bites ???

No-Bake Funfetti Cake Bites
Ingredients:
1/2 GF flour
1/2 c almond flour
Pinch cinnamon
Pinch sea salt
1/4 melted coconut butter
2-3 tbsp almond milk
2 tbsp maple
3 tbsp cane sugar
1 tsp vanilla extract or 1/2 tsp vanilla bean paste
2-3 drops vanilla Stevia
Dye-free funfetti sprinkles (I use Whole Foods brand)
Method:
Mix the dry (first 4) ingredients together in a bowl.
Mix the coconut butter, almond milk, maple syrup, cane sugar, vanilla, and stevia in a separate bowl.
Mix the wet into the dry ingredients, then stir in sprinkles.
Roll into balls or press into a shallow dish.
Store refrigerated and enjoy when a craving strikes =)
