As much as I LOVE cooking breakfast a few days a week, there are also days where I just don’t. And others days where I’d love the luxury of spending an hour in the kitchen, but it ain’t gonna happen! Yet, some of the tastiest meals and snacks I have made required only a handful of ingredients and a few minutes of time. The key is high-quality ingredients and little creativity!
Case in point: this Fancy, Meal-Worthy Banana Sourdough Toast =)
The bread component here is ESSENTIAL. Store-bought sandwich bread or stale bread will make this toast texturally disappointing and frustrating to eat. I used my favorite sesame semolina bread from Katic Breads in the Chicago burbs. Whole grain sourdough would be awesome too! French boule or ciabatta may also work.
As for the pistachio butter, it’s somewhat easy to acquire these days but some kind of mixed seed butter or Sunbutter would have a similar flavor. Choose something that makes your taste buds sing =)
As for the banana, a yellow non-spotty one is best to avoid mushy or overly sweet toast.
Next comes all the glorious toppings. Honeycomb and/or raw honey is a must and really highlights the pistachio butter. Toasted nuts for crunch, and cinnamon and salt make everything better 😉
I think I may have just ruined you for all other toast!

Fancy, Meal-Worthy Banana Toast ??? (serves 1)
Ingredients:
1 slice thick-cut Katic breads Sesame Semolina Bread (or a similar crusty sourdough with a soft interior)
1 small banana, sliced lengthwise
1 tbsp honeycomb, and optional 2 tsp honey
1 tbsp pistachio butter (I like Nutmeg’s)
1 tbsp chopped roasted pecans
For sprinkling: sea salt, cinnamon
Method:
Toast your bread! (I tend to get it pretty toasty so that it doesn’t get soggy under the weight of the toppings 😉
Allow the bread to cool for 1-2 minutes then spread with half the pistachio butter and honey (if using)
Top with the banana slices followed by the honeycomb and pecans
Drizzle with remaining pistachio butter and sprinkle with salt and cinnamon
