I made a dessert for all the foodies who love peanut butter, frozen desserts, and ice/nice cream.
We’re calling it Peanut Butter Golden Milk Nice Cream Pie.
My apologies for the mouthful-of-a-title.
To wrap your head around this dessert, just think . . .
If peanut butter pie and nice cream conceived a child, this would be it!
But way, there’s more . . .
The golden hue comes from turmeric and cinnamon, so this love child is ANTI-INFLAMMATORY!
Because some of us don’t like to sip our golden milk; we prefer it in ice cream-esque form.
This pie deserves an Oscar really. Particularly because it doesn’t require your stove or oven or any fuss at all.
The most difficult part is patiently waiting for it to freeze. Hint: Use frozen bananas if you want this baby to make it to your mouth faster 😉
Peanut Butter Golden Milk Nice Cream Pie
Crust:
1 tbsp flax mixed with 1.5 tbsp water
1/2 c oat flour
1/2 c mixed nuts
2 tsp maple syrup
Pinch sea salt
Filling:
4 bananas (frozen or fresh)
1/2 c organic peanut butter
3/4 tsp ground turmeric
3/4 tsp ground cinnamon
Pinch black pepper
Pinch sea salt
Optional: 1 tbsp raw honey
For the swirl: homemade chocolate sauce and/or date syrup
Method:
In a food processor, combine the oat flour, nuts, and salt and blend until the nuts are broken down.
Add the flax mixture and maple syrup and blend for 10 seconds, or until a crumbly dough forms.
Press the mixture into a parchment lined 6 inch springform pan, mini tart pan or a few silicone molds.
For the filling, add all the ingredients to the processor and blend until a smooth mixture forms. This will take longer if the bananas are frozen.
Transfer the filling to the pan(s) and spread evenly.
Swirl in chocolate sauce and/or date syrup and place in the freezer until completely frozen.
Remove from the pan, cut in triangles and enjoy immediately or store in the freezer for later.
