Everyone has been asking for this recipe since I posted pictures on Facebook and Instagram, so here it is!
The answer to your crepe fantasies!
Grain-free, sugar-free, and dairy-free crepes that are delicious and easy to make at home!
They even get a little extra pizzazz from Young Living’s Orange Vitality Oil, which adds the most beautiful citrus flavor!
Does it get any better? I think NOT.
All you need is a blender, and a gentle hand when it comes “flip” time. I don’t even own a crepe pan – I just used a small non-stick saute pan 😉
My favorite part of this fancy French-inspired breakfast celebration?
The fillings and toppings of course. I went the berry and coconut cream route, but the options are endless – meaning you should make these crepes many, many times to test out all the yummy variations!
(Makes 1 dozen small crepes)
1/2 c buckwheat groats
1 small banana
1 1/2 tsp baking soda
1/4 tsp sea salt
1/2 tsp cinnamon
Splash vanilla extract
3-4 drops Young Living orange vitality oil
1 pastured egg, or 2 flax eggs (2 tbsp flax mixed with 5 tbsp water)
1/2 c Almond milk/as needed, Variation: use concentrated chai tea and 1 drop cardamom oil instead of the milk for a sweet and spicy twist!
Soak the buckwheat for at least an hour or up to 8 hours. Drain and rinse well.
Add everything but the milk to a high-speed blender and blend until smooth. Tip: I blend the batter the night before because it’s easier to work with when chilled.
Transfer to a bowl and add milk to achieve a thin batter.
Cook batter in coconut oil (don’t skip the oil!), flipping after bubbles form
Serve with berries, nut butter, coconut yogurt or coconut cream, and maple syrup.
