Easy, Soft-Baked Orange Tahini Cookies (GF, Vegan, Oil-free)

I’ve been craving cookies HARDCORE lately. So much so that I cleaned out my freezer supply to the point that panic set in.

A cookie-less freezer is no freezer of mine!


But I’ve had a lot on my plate and haven’t felt overly ambitious to create any recipe that required new ingredients or more than a few minutes of my time.

I was doing some recipe testing for someone using tahini, so I’ve been staring at the rest of the jar – and then it hit me . . . 

That tahini has no better destiny than in a no-frills soft, fluffy cookie complete with a glass of almond milk!

And because in my opinion orange and tahini are inseparable BFFs, I couldn’t resist adding a few drops of orange vitality oil to amp up the frequency and provide delish citrus flavor!

FYI: Cinnamon oil would be great here too 😉 So would almond butter in place of tahini.

Anyway, you need these cookies in your life. They are soft, delicious, sweet enough to be called dessert, and have nothing bad in ‘em!

P.S. Don’t forgot to stash a bit of the dough in your freezer so you can indulge in your future cookie cravings =)

Easy, Soft-Baked Orange Tahini Cookies

Ingredients:

1/2 c tahini 

1/2 c maple syrup or warm, drippy honey

2 tsp vanilla extract

1/4 c coconut milk (or sub water)

1/4 c coconut sugar

2 1/4 c oat flour

1 tbsp baking powder

4-5 drops Young Living’s Orange Vitality Oil

Optional stir ins: dark chocolate chips, chopped walnuts, golden raisins

Method:

Mix the tahini, maple/honey, vanilla, coconut milk, and coconut sugar in a large bowl.

In a separate bowl, mix the flour and baking powder.

Combine the wet and dry ingredients and mix well with a spatula.

Add the orange oil and stir ins of choice.

Refrigerate the dough for at least an hour.

Scoop onto a parchment lined sheet pan and bake at 350 degrees for 8-10 minutes or until bottoms are golden brown. 

Cool completely then transfer to an airtight container.
