These small (but mighty!) bites received a lot of love on social media so I believe they deserve their own blog post 😉 Chewy, slightly sweet, and dark chocolate studded – they’re the perfect treat to have ready in your freezer for healthy snacking.
I consider them PERFECTION. With the flavor and texture of cookie dough and made entirely of whole foods, they deserve a gold metal. The maca and extra dark chocolate give them a sophistication and decadence that is rare in easy no-bake treats – I can’t get enough of these superfoods!
These babies are similar to my other no-bake treat recipes, but unlike many of the others, they don’t require dates. I recommend making them in a high-speed blender, but a high-quality food processor will do the trick as well.
No-Bake Chocolate Chip Cookie Dough Bites
1 1/4 c rolled oats
3/4 c almonds (I use blanched)
1/3 c nut butter
1 tsp maca powder
1/4 tsp Himalayan sea salt
3 tbsp maple syrup, or to taste
3 tbsp ground golden flaxseed
1/4 tsp ground cinnamon
1 bar Antidote 84% cacao nib bar (or other dark chocolate), chopped.
In a high speed blender, grind the oats to almost a flour.
Add almonds and blend until broken down.
Add cinnamon, salt, maca, and flax and blend for a couple seconds.
Add nut butter and maple syrup and blend to form a cookie dough. Transfer to a bowl, stir in chocolate, and roll into bite size balls or transfer to a silicon mold.
Freeze until ready to eat.
Note: If you don’t have a blender or food processor, replace the oats with 1 1/2 c oat flour and almonds with 1 c almond flour. Mix dry ingredients in one bowl, the wet in another and stir together using a spatula or your hands.
