No-Bake Gingerbread Bites

I’m on a mission to make gingerbread a year-round thing! And these chewy, sweet, and spicy bites just may convince you to do the same!

Not only do these easy, simple snacks taste divine, they are full of superfoods that will make your body and soul really FRICKIN’ HAPPY!

Let’s talk ingredients:

Oats: the Queen of resistant starches and antioxidant packed, there’s a reason we’re told to eat our oatmeal for breakfast 😉
Almond Butter: rich in vitamin E and healthy fats, I rarely go a day without it
Dates: nature’s candy, rich in iron and other minerals, and excellent for digestive health
Blackstrap Molasses: also high in iron and calcium, stabilizers blood sugar and promotes healthy skin
Ginger: supports digestive, aids in weight loss, anti-cancer and anti-inflammatory
Maca: anti-stress, balances hormones, increases energy, and aids in fertility

So these little treats pack quite a nutritional punch in just a few bites =)

They also freeze amazingly well, so stock up for when you need a little pick-me-up! AKA: make a double batch 😉

No-Bake Gingerbread Bites (makes 12-15 bites)

1/2 c oat flour
1/2 c oats
1/4 c almond butter
4-6 large soft Medjool dates
2 tbsp blackstrap molasses
1/2 tsp ground ginger
Optional: 1/2 tsp maca powder

Optional for dipping: 3 tbsp melted coconut butter

Pulse oats in a food processor until broken into small pieces. Add the oats and oat flour to a bowl along with ginger and maca (if using) and set aside.
Puree dates, almond butter and molasses until a sauce forms.
Add the dry ingredients and pulse until a dough forms.
Roll into balls or press into a shallow dish.
If dipping in coconut butter, freeze for 30 minutes, then coat half of each bite in melted coconut butter before refrigerating in a waxed-paper lined container.
Refrigerate or freeze until ready to eat.
