I know. I know. The words chia pudding and sugarless don’t exactly make ya salivate. And they certainly don’t evoke memories of warm, gooey cinnamon rolls.
But if you can get over the fact that this is a light, healthy meal without any bread-like texture or painstakingly sweet icing, this is a flavorful breakfast you will certainly enjoy!
The magic here is thanks to . . .
1) Cinnamon bark oil – it adds mega cinnamon flavor with just a single drops, and it’s sweet despite its zero sugar content. Thanks Young Living!
2) Coconut butter – nature’s icing. Really though. This stuff is gold. Warm it up a bit and it’s the same color and consistency as cinnamon roll icing. And it’s naturally a bit sweet. YESSSSS!

It is super fast and simple to put together!
And no matter what diet/food preferences you have (dairy-free, raw, whole food, plant-based, paleo, etc), or whether you just want to eat healthier, this meal fits the bill!
I highly recommend white chia seeds for both color and the fact that the flavor is more neutral, but black chia will do in a pinch.

Sugarless Cinnamon Roll Chia Pudding
2/3 c non-dairy milk
2 tbsp white chia seeds
1 drop Cinnamon Bark oil or Thieves oil
1/2 tsp vanilla extract
1 tbsp coconut butter, melted
Toppings: pecans, berries, coconut flakes
Mix the first 4 ingredients together in a bowl. Let rest at room temperature for at least 30 minutes. (If the pudding is cold, the coconut butter will Harden!)
Drizzle with coconut butter, and top as desired
