Caramel Maca Latte and Honey Sesame Cookies

Maca, a superfood reminiscent of caramel in flavor is my new bff. Dates, a sweet sticky fruit that tastes like caramel when dried is my go-to sweetener. Combine them and you’ve got a whole lotta healthy caramel goodness. So, this recipe – All the stamina-enhancing benefits of maca and the energizing properties of caffeine in 1 cup? And caramel?! Count. Me. In. So let’s add creamy almond butter, blend it up, and drink it. This beverage pairs perfectly with the deep toasty flavor of coffee, but honestly, the addition of maca alone is enough to boost your energy level, so I highly recommend trying it with Rooibos tea.

Caramel Maca Latte

Milk: 2 tbsp almond butter, 3 large soft dates, ½ tbsp maca, vanilla, cinnamon, sea salt, 2 ½ c warm water

Blend everything in a high speed blender until creamy and frothy. Chill until ready to use.

Combine ½ c milk with ½ c strong coffee or Rooibos tea

Or combine 6 oz. milk with 1 shot expresso

Serve hot or iced

And now the cookies . . . 

These no-bake treats are inspired by my love of Greek and Middle Eastern desserts, which often feature sweet sticky honey and humble sesame seeds. The texture is simply perfect. Slightly sticky, a tad crumbly, some texture from the seeds. The flavor is perfectly nutty with warm notes of cinnamon and honey. They make a fantastic snack or healthy dessert!

No-bake Honey Sesame Cookies

½ c oats

½ c cashew pieces

2 soft dates, chopped

3 tbsp hemp seeds

Pinch sea salt

2 tbsp cashew butter or tahini (or a combo of both)

1 tbsp chia seeds mixed with 3 tbsp cold water

2 tbsp raw cinnamon honey or 2 tbsp honey plus ½ tsp cinnamon

Great additions: 2 drops each cardamom & orange essential oil

2 tbsp white sesame seeds, for coating

In a food processor, grind the oats and salt to nearly a flour. Add the cashews and grind into small pieces. Add the hemp seeds and dates a pulse a few times. Add the tahini/cashew butter, chia mixture, and honey and processor until a cookie dough forms. Roll into balls. Flatten or leave round. Coat in sesame seeds. Store refrigerated. Eat happily with a Caramel Maca Latte. Smile.
