Fauxgurt, Oat, and Tropical Fruit Parfait

I want my first recipe post this spring to be fun, fruity, and colorful so I grabbed some gorgeous fresh fruit and put the Vitamix to work!

Yogurt. It’s a breakfast staple for many of us. In fact, I started most days with a bowl of Greek yogurt for several years. It’s protein-packed, probiotic filled, sweet, and pairs well with fruit, granola, etc., so I understand the allure.

But let’s talk dairy for a second. It’s common knowledge now that milk products do not strengthen our bones, but actually block calcium absorption. Bummer, I know.

But, wait! What if I told you there is a yogurt alternative made from just a couple plant-based whole food ingredients. And it’s not cultured coconut milk.

Although I love the idea of a dairy free yogurt that has the same probiotics as dairy yogurt, the list of ingredients is a bit frightening, and the sugar load pretty outrageous. And I’m not about to start making my own yogurt.

So, introducing fauxgurt, a dreamy combination of fruity papaya, luscious mango, and creamy cashew butter. What it’s lacking in probiotics it makes up for in a bunch of vitamins and minerals that your body may be lacking, especially during the winter months.

Whiz it all up in a blender and, Waahlaah! Breakfast is served.

Fauxgurt
2 ½ c very ripe diced papaya
½ ripe mango
A few strawberries (or any berry)
3 heaping tbsp roasted cashew butter
½ tsp cinnamon
1 tsp vanilla extract
Blend it all up in a high-speed blender until smooth and creamy. Refrigerate overnight or until ready to use.

Overnight oats
½ c each rolled oats and steel cut oats
1 tbsp chia seeds (optional)
1 c unsweetened or lightly sweetened non-dairy milk
Pinch cinnamon
Pinch sea salt
Stir everything together, cover, and refrigerate overnight.
You can cook it like oatmeal in the morning if you prefer hot oats

For serving: Diced banana, mango, papaya, fresh berries, toasted cashews, pecans, chia seeds, coconut flakes, or any other favorite topping

Assembly
Right before serving, layer oats, fauxgurt, fruit, and other toppings in a bowl, glass or mason jar. Grab a long spoon and dig in!
