Everyone has had a Larabar, right? RIGHT.

It’s kind of the perfect snack and pretty much the only energy bar out there that is made from just a few raw ingredients. AND THAT’S IT.
No sugar, grains, dairy, or junk. Most varieties have three ingredients. Dates, a couple kinds of nuts, and sometimes coconut or another dried fruit. And they are often on sale for $1! Say, WHATTT??
And there are dozens of flavors now so it’s hard to get bored.
Except I did. The other day. I wanted a pistachio Larabar. And not just plain ol’ pistachio, but creamy indulgent, cannoli-esque pistachio. This Larabar did not exist.
So I created my own bar with all the wonderful ingredients you find in a Larabar but with the intention of satisfying my sweet tooth Italian spirit. And I succeeded.
And the best success is always the kind you can literally taste. A nutty, slightly sweet base that is the perfect ratio of gooey and chewy, studded with homemade chocolate pieces and dried cranberries. And a luscious creamy topping sweetened with a bit of raw honey, then topped with more crushed pistachios.
Perfection, really.

Cannoli Energy Bars
Base:
Heaping ½ c shelled pistachio pieces
1/3 c rolled oats
3 tbsp unsweetened shredded coconut
6 fresh pitted Medjool dates
1 flax egg
Optional, but recommended: 2 tbsp chopped homemade chocolate and/or 2 tbsp dried cranberries
Creamy topping:
½ c melted coconut butter
1 tbsp liquid raw honey (submerge jar in a bowl of hot water if thick/crystallized)
½ tsp vanilla extract
Topping: chopped pistachios, more chocolate
Grind oats in a food processor until ground into small pieces. Set aside. Grind pistachios to a flour. It’s okay if it starts to clump together. Add coconut, ground oats, and dates and blend to combine. Then add the flax egg and blend for a few more seconds. Press mixture into a parchment lined shallow glass dish.
Wipe out the processor, then blend the coconut butter, honey, and vanilla, scraping the sides a couple times, if needed. Spread over bottom layer, top with pistachios/drizzle with chocolate and refrigerate until firm. Cut into bars and devour!
