In January, the promise of a warm, comforting, delicious breakfast is usually the only motivation I have to get out of bed. It’s even better when that breakfast is already waiting for me and my large cup of coffee to cozy up at the table.
And no, this does not require a live-in chef, or extremely generous husband/boyfriend/roommate. Just a little thinking ahead the day before. Which is why the humble muffin is so great. Besides, it almost tastes like a cupcake but with the justification of being breakfast food.
And in the case of my apple cinnamon muffins, healthy breakfast food! Sweetened with fruit (applesauce and dates) and a bit of maple syrup to amplify the flavor, there is nothing not to love about these make-ahead bundles of joy that are sure to charm you into being a morning person, if only for the 5 minutes it takes to eat one (or two).
Side note: I am not going to post another green smoothie recipe. RESIST the URGE I told myself. Which, quite frankly, the urge didn’t exist because it’s cold outside and I don’t think anyone is ready to give up comfort food and dive head-first into juice/smoothie/salad land at the moment. But if you are one of the few overly motivated people who somehow avoids procrastination, I have you covered, here.
Apple Cinnamon Muffins (Gluten free, Vegan)
1 c unsweetened apple sauce
1/2 c date sugar, or sub coconut sugar
3 tbsp maple syrup
¼ c coconut, avocado, or other unrefined non-gmo oil
1 tsp vanilla extract
2 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
½ c almond flour
½ c tapioca starch
½ c sorghum flour
1/2 c rolled oats
1/4 c non-dairy milk
Optional: 1 c finely diced apple or shredded apple (liquid squeezed out)
Crumble Top:
3 tbsp chopped pecans
2 tbsp rolled oats
½ tsp cinnamon
1 tbsp maple syrup
Let the flax eggs thicken for 5 minutes. Stir in the next 5 ingredients. Add the dry ingredients and mix well. Gently stir in the milk, and apple if using. Pour into muffin liners. Combine topping ingredients and sprinkle each muffin with mixture. Bake at 350 degrees for 18-22 minutes, or until springy to the touch. Best enjoyed warm.
