Some girls get giddy when they receive roses. But me? I much prefer discovering 50 pounds of fruit in my trunk. That’s true love in my world.
Luckily, most of it is apples, which last a while. But they obviously don’t last forever. So I have been challenging myself to create as many different recipes with apples as possible. I came up with this apple cider-esque latte that is oh so comforting and captures the flavors of autumn. If you love apples you must try my super yummy apple pie waffles that are the perfect weekend breakfast; and raw caramel apple cheesecake that might just convince you that a raw vegan diet is the way to go (or at least in the world of desserts).
So now it’s time to time to go apple picking, or find a super awesome boyfriend that bombards you with an insane quantity of apples. Grocery stores work too.
Fall Spice Apple Rooibos Latte
1 large organic apple, cored and chopped (Fuji or Honey Crisp are great choices)
3-4 Organic Rooibos tea bags, I like Rooibos Chai
½ tsp cinnamon
¼ tsp pumpkin pie spice
1 c almond milk
1 tbsp raw honey or coconut nectar
Pour 2 cups simmering water over the tea bags. Let stand 5-10 minutes. Remove bags and puree tea with spices and apple. Strain through a fine mesh strainer and discard pulp. Stir in milk and sweetener. Gently reheat in a saucepan. Great served with a cinnamon stick and coconut whipped cream. Makes 2 – 12 oz. servings.
