Lemon Cream Chia Pudding

This chia pudding is so amazing, I feel like I’m eating dessert for breakfast. Thanks to coconut, cashews and some great quality honey, this healthy, satiating (and Raw!) breakfast tastes like a guilty pleasure =) And what’s even more awesome, it’s so great by itself it requires few (if any) toppings so you don’t have to fiddle to find healthy, tasty toppings to enhance the flavor or disguise an aftertaste (like I know we’ve all done with many bowls of oatmeal), although topping it with some fruits and more coconut surely doesn’t hurt. If you’re really into the creamy-coconut-lemon combination, make extra and instead of adding chia, use it as a dessert sauce or add it to a smoothie for a creamy citrusy-punch. Also, feel free to use orange, grapefruit or any other citrus that looks good, don’t feel restricted to lemon.

Lemon Cream Chia Pudding

1/4 c chia seeds

¼ c cashews

1 tbsp lemon juice

1 tbsp raw honey

2 tbsp shredded coconut, or fresh if available

2 tsp coconut oil

1 c warm water

Topping Suggestions: diced apple and shredded coconut, or berries and sliced almonds

Blend everything but the chia seeds until smooth creamy “milk” forms. Pour into a bowl and stir in chia seeds. Refrigerate overnight. Whisk in water or nut milk if it’s too thick. Serve chilled with your favorite toppings. This makes 2 generous servings. Enjoy!
