I love these bundles of superfoods that are disguised as donut holes! They are raw, vegan, gluten-free, and the only sugar is from dates and apricots. These are also a lot quicker to make then cookies or donuts so there are no excuses not to make them. Make a double batch and keep them in your freezer for whenever you are craving a little pick-me-up.
Apricot, Chia, and Coconut Bites
½ c oats
½ c raw cashews
1 tbsp chia seeds
Pinch of salt
½ tsp cinnamon
½ c very finely shredded coconut, Find it HERE (or pulse shredded coconut in food processor until it resembles fine crumbs)
¼ c dates (preferably Medjool), chopped and soaked for at least 4 hours
¼ c dried apricots, chopped and soaked for at least 4 hours
¼ c raw almond butter
For coating: 3 tbsp very finely shredded coconut
Place first 5 ingredients in a food processor and run until very finely ground. Pour into a bowl and set aside. Strain the dates and apricots squeezing out as much water as possible. Save this to sweeten nut milks or anything really! Add dates, apricots, and almond butter to food processor and run until a paste forms. (It won’t be completely smooth.) Add cashew mixture that you set aside and coconut and run processor until a ball forms or until ingredients are evenly blended. It should resemble a firm cookie dough. Flatten mixture and place in the freezer for about 10 minutes. Roll into small balls, roll in coconut and freeze until ready to eat . . . if you can wait that long.
