It’s Meyer lemon season and Trader Joe’s had a whole bag for $1.99! Lemons are one of the most nutritious foods, especially if you eat the flesh, not just the juice or zest. Meyer lemons are particularly ideal for consuming the flesh because they have less bitter white pith, thinner skin, and a more floral taste then other lemons. If you are a coconut lover, try adding a handful of shredded coconut or a tablespoon of coconut oil to intensify the flavor. If you are not into sweet smoothies, omit the banana. The banana adds some creaminess and sweetness so this drink is really more like a milkshake.
Meyer Lemon & Coconut Smoothie
Makes 1 smoothie
1 Meyer lemon, peeled
¼ c soaked cashews
½ c canned coconut milk (light or regular), chilled
½ frozen banana
1 large, fresh pitted date or 1 tbsp soaked date paste
1-2 c ice
Optional: handful leafy greens
Combine ingredients in a high-speed blender and blend on high speed until smooth and creamy. Drink immediately.
