Raw Pecan Pie Cookies

I always have dessert cravings at the most inopportune times. One of the beauties of raw desserts (in addition to the amazing health benefits) is that you can store them in the freezer almost indefinitely without sacrificing quality.  Thus, I have learned to keep my freezer well stocked with raw treats so that none of my sweet cravings go unsatisfied. I have made dozens of raw cookies but these are among my favorites.  Using high-quality almond butter (preferably homemade) and super fresh, gooey, chewy dates significantly makes the difference between a good cookie and an out of this world cookie. If you have lots of dates and almond butter make a couple batches, as these make great gifts. It is always rewarding to astonish others with the pure deliciousness of raw food . . . these guys may change people’s assumptions about eating raw.

Raw Pecan Pie Cookies

½ c gluten free oats

1/3 c raw shredded coconut

5 fresh Medjool dates, pitted and soaked

¼ c raw almond butter

8 fresh Medjool dates, pitted

1 ½ c raw pecans

Pinch salt

½ tsp ground cinnamon

Pinch ground ginger

Pulse oats and coconut in food processor until finely ground. Pour into a bowl. Add pitted dates, pecans, salt and spices to processor and run until mixture just sticks together between your fingers. Pour into bowl with oat mixture and mix well. Add soaked dates and almond butter to processor and process until a smooth, wet paste forms. If the dates are not blending well, add a tablespoon or two of date soaking liquid. Once smooth, add dry ingredients and process until just combined. Roll in balls and freeze or press into a pan, freeze and cut into desired shape once frozen. These keep for several months in the freezer.
