I have fond memories of indulging in a bear claw from Panera in my teenage years! Although I’ve had much better, fresher pastries since those still have a piece of my heart ♥️
I still mess around with yeasted and laminated doughs every now and then, but sometimes I crave a healthy homemade treat that comes together in minutes rather than an entire day of labor =)
Enter: these delicious cookies that have the same flavor profile (and similar texture!) as the fancier butter-laden pastry, without the blood-sugar roller coaster or need for a rolling pin and yeast!
Simple, easy, nourishing, and so yummy – these will become one of your go-to comfort desserts!
They’re great with a cup of tea or glass of non-dairy milk!

Healthy Bear Claw Inspired Cookies
Almond Filling:
1/4 c Almond flour
2 tbsp Monkfruit
1 tbsp Vegan butter – melted
1 tbsp almond butter
Dash Almond extract
Cookie dough:
1/2 c GF flour blend like King Arthur
1/3 c Almond flour
2 tbsp cassava flour
3 tbsp Vegan butter
2 tbsp non-dairy yogurt
2 tbsp Maple syrup or coconut nectar
Pinch Stevia or 1 tbsp granulated monkfruit
3/4 tsp Baking soda
1/4 tsp Almond extract
Sliced or chopped almonds for topping
Coconut Butter for drizzling
Instructions:
Mix the filling and cookie dough ingredients in separate bowls,
Roll 1 1/2 tbsp Dough into balls then shape each into a crescent shape.
Make an indentation in the center of each cookie and press 1 tsp filling into the cavity.
Top with almonds.
Bake for 12-14 minutes or until dough is firm and edges are golden.
Optional: Glaze with melted coconut butter.
