No-Bake Sugarless Purple Dessert Bars

This creative treat will convert you to a purple sweet potato LOVER!


A protein-packed, date-sweetened no-bake crust topped with a sweet and creamy beautifully colored mousse!

It makes a great breakfast, snack and dessert, and is packed with nutrition from vibrant purple sweet potatoes, coconut cream, dates, Ayurvedic protein powder, and almond flour!

Top with yogurt, more coconut cream and/or fruit for an extra-delish bite! 

No-bake sugarless purple dessert bars – Paleo + Vegan!

Base:

3 tbsp vanilla protein powder (I love This one) 

1/4 c almond flour

1/4 c granola, buckwheat or oats (I used the crumbs from Lil Bucks Clusterbucks)

Dash cinnamon

4-5 soft dates – halved 

1 tbsp oil or sub nut butter or applesauce 

1-2 tbsp water

Grind the protein powder, almond flour, granola/oats, and cinnamon in a food processor.

Add the dates and blend to incorporate.

Add the wet ingredient and 1 tbsp water and blend until it forms a firm dough that sticks together.

Add water 1 tsp at a time if mixture is dry.

Press into a shallow dish lined with parchment and refrigerate.

Topping: 

1/2 c roasted purple Japanese sweet potato (roast in the skin until very soft, cool, then scoop out the flesh and discard skin) 

3/4 c thick coconut cream (Such as Thai Kitchen) 

1-2 tbsp sweetener of choice

1 tsp vanilla extract  

Method

Blend everything in the food processor until smooth and creamy.

It should have a “whipped” texture.

Spread over base and freeze until solid.

Slice then store in the freezer. 

Thaw 5ish minutes before enjoying =)
