Soft cookie lovers – these are for you!


Slightly crispy/chewy around the edges with a soft and pillowy interior.

These have that perfect sweet caramelized flavor and are truly just a comforting classic.

Of course they are amazing warm but also taste awesome the next day (simply store in an airtight container). I highly recommend a freezer stash of the dough as well 😉

Paleo Chocolate Chip Cookies 

Ingredients:

1/4 c melted vegan butter

1/4 c almond or cashew butter

1 pastured organic egg (or egg substitute) 

1/3 c coconut sugar

1 tsp vanilla extract 

1/4 c monkfruit 

2/3 c cassava flour

2 tbsp tapioca starch

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp cinnamon

Dark chocolate chips or chopped dark chocolate

Blend the butter, nut butter, coconut sugar, monkfruit and vanilla with an electric mixer on medium-high until smooth.

Beat in the egg until the mixture is glossy/frothy.

Sift the dry the ingredients in a large bowl. 

Add wet to dry and mix by hand or with the mixer until a sticky dough forms.

Stir in chocolate to your heart’s desire!

Refrigerate for an hour or more.

Form into 8-10 balls then bake on a parchment lined pan at 350 for 10-12 minutes or until golden.

Cool on a wire rack for 15-20 minutes.

Enjoy warm with almond milk!
