The other ingredients are pretty typical in a healthy plant-based kitchen, and easy to find online and in most grocery stores.

I always recommend the best quality dark chocolate for a chocolate chip cookie, so I listed some of my favorites below 😉

Adaptogenic, Gut-friendly, Vegan + Paleo Chewy Chocolate Chip Cookies

Ingredients: 

2/3 c almond flour

1/4 c vanilla Ayurvedic Protein 

1 tbsp coconut flour, sifted 

1/2 tsp baking soda

1 tsp cinnamon

2 tbsp maple syrup

2 tbsp coconut sugar or granulated monkfruit

2 tbsp cashew or almond butter

2 tbsp vegan Cream cheese, I like Spero Foods (or vegan Greek yogurt or additional nut butter), room temperature

1 tsp vanilla extract

Splash non-dairy milk, if needed

Chopped Paleo chocolate (such as Hu kitchen, Let’s Bake Believe, Raaka, or Evolved Chocolate)

Method:

Mix the first 5 ingredients in large bowl. (Option to sift all ingredients, but definitely sift coconut flour!)

MIx the remaining ingredients (except chocolate) in a smaller bowl until smooth and glossy.

Pour wet into dry and mix by hand or with an electric mixer. If the dough is dry add 2-3 tsp non-dairy milk to reach cookie dough consistency.

Stir in chocolate.

Form into 10-12 balls, roll, and flatten. They won’t spread much in the oven.

Bake at 350 degrees for 10 minutes.

Enjoy warm or save for later =)
