These are a perfect: breakfast accompaniment, on-the-go snack, pot-luck or picnic dish, or crazy healthy dessert.

Make a (few) batch(es)! Nibble as you roll. Stash some in the fridge and extra in the freezer – because caramel cravings are real – so let’s be prepared with nutrient-packed bites that taste like a guilty pleasure!

Salted Caramel Snack Bites (Raw, Vegan) (Makes 20)

Ingredients:

1 c packed dates (very fresh, or soaked and well drained)
1/2 c cashew butter (thin & runny)
1/2 c almond butter (thick, homemade)
1/2 tsp sea salt
2 tsp maca powder
3 tbsp coconut flour
Coconut flakes, for rolling

Method:

Blend the dates in a food processor to form a paste. Add the nut butters, salt, and maca, and blend until smooth. Add coconut flour and pulse to create a thick cookie dough consistency.
Pack into molds or roll into 3/4 oz balls and roll in coconut. Store refrigerated.
