Summer desserts are so EASY!
I mean it. Thanks to the sweetness of cherries this season this tart filling is sweetened with only cherries, which have amazing health properties, in case you didn’t know 😉
And as you probably know, the health benefits of chia are countless!
Anyway, this recipe is really about combining a few high-quality ingredients to create a memorable summer dessert. This tart is refreshing, yet indulgent, and is healthy enough for breakfast, a snack, etc. Coconut, almond and vanilla all pair perfectly with cherries without outshining the fruit. This treat’s beautiful pink color is thanks to the juicy, flavorful fruit that summer provides.

Cherry, Chia, and Coconut Tartlets
1/3 c almonds
1/3 c shredded coconut
3 fresh Medjool dates
1/8 tsp cinnamon
In a food processor, blend almonds, coconut, and cinnamon until almonds are a pebble consistency. Add dates and process until mixture is slightly sticky. It should start to form a ball in the processor. Press crust into 2-4 inch parchment-lined tartlet pans with removable bottoms and refrigerate while you make the filling.
25-30 large sweet cherries, pitted
½ c almond butter or cashew butter
1/3 c coconut butter
½ tsp vanilla extract
3 tbsp chia seeds
Add everything but the chia seeds to the processor and process until smooth, scraping the sides a few times. Transfer to a bowl and stir in chia seeds 1 tbsp at a time. Let sit at room temperature for 20 minutes or until mixture starts to set. Divide between the two crusts and refrigerate at least 8 hours. Pop out of the pans, peel of parchment and enjoy topped with fresh cherries and coconut flakes.
