I have never been a fan of cranberry sauce. The processed stuff in the can is just . . . repulsive. And I have never found a recipe that I like enough to stand over the stove stirring for an extended period of time. I decided to give this seasonal favorite another go this year. I figured if the vitamix can make ordinary soups and smoothies taste superior, why not give cranberry sauce a go? And why not make it raw? It’s a lot healthier and a lot quicker. Win, win.
Although I have been the only eating this at my house I am not complaining because I have been adding it to anything and everything. So whip a batch. It will take you all of two minutes! Celebrate the season and definitely celebrate that something so delicious and versatile can be made in the time it takes to brush your teeth.
Two Minute Raw Cranberry Sauce
8 oz. raw cranberries
2 small clementines, peeled
4 large fresh dates or ¼ soaked date paste
¼ c agave nectar
½ tsp cinnamon
Optional (for a “jelly” consistency): 2 tbsp chia seeds
Combine first 5 ingredients in a high speed blender and run until a smooth creamy sauce forms. For a gelee, stir in chia seeds. Serve on muffins, toast, pancakes, cheesecake, or stir into hot nut milk.
*Don’t let all that deliciousness stuck at the bottom of your blender get wasted. Add a cup of water, hot tea or milk to the blender, turn it on the highest speed for 30 seconds and you have a cup of oh so yummy cranberry cider or latte or whatever you want to call it. You’ll never have so much fun cleaning your blender ; )
